Lounge Organization
The lounge is an area located near the reception area where guests relax, meet other guests, or wait for rooms to be released.
The guests at the lounge may require food and beverage services. The lounge waiter should be prepared to serve coffee. tea, aperitifs, wines, spirits, and snacks. Other than alcoholic beverages, all dishes are collected either from the still room or from the main kitchen.
Alcoholic drinks are collected from the bar. The orders are collected against KOT/BOT on a tray and served at the lounge by lounge waiters, just like room service. At the end of service, bills should be presented.
Chance customers settle bill through cash or card and residential guests sign the bills, which would be forwarded immediately to front office with the room number.
The entire food and beverage operation in the lounge is under the control of the lounge head waiter and he gets the work executed through lounge waiters.
The following are the duties of the lounge staff.
Lounge head waiter
He/she is responsible for the following:
1 Taking orders from guests
2 Making KOT/BOT and handing over to lounge waiters
3 Supervising lounge mise en place activities
4 Supervising lounge service
5 Preparing indent for lounge service requirements, il separate lounge pantry is available
6 Ensuring cleanliness
7 Briefing lounge service waiters
8 Preparing duty schedule for lounge service waiters
9 Ensuring trays and service equipment are cleared from lounge
10 Maintaining stock of lounge pantry
Lounge waiter (le chef de salle)
He/she is responsible for serving guests in the lounge area. The duties include the following
1 Collecting dishes from dispense bar/still room/lounge pantry on a tray
2 Carrying to lounge and serving to guests Presenting bill
3 Collecting signature of guest on bill with guests room number , if he/she is a residential guest and representing it to front office for charging to the guest account. If he / she is a chance customer , cash or card is collected for settlement of bill.
4.Replenishing lounge pantry (if it exists) under supervision of lounge head waiter
5. Clearing trays and service equipment from lounge
6 Personal grooming
7 Informing guests' complaints/appreciation to lounge head waiter
8 Performing any other work assigned by the lounge head waiter
9 Attending briefing
