What to do and don't during the service to the guest???
Do's
• Acknowledge arrival of guests
• Greet guests with a warm and pleasant smile
• Guide them to their table
• Be attentive and anticipate their requirements
• Be within sight of guests
• Serve water, bread, butter, and accompaniments without making the guests ask for them
• Walk briskly and hold proper posture
• Wash hands frequently, especially after the use of toilet and sneezing
• Wash hands after smoking
• Handle service equipment carefully without making noise
• Converse with guest politely and confidently, maintaining eye contact
• Keep things ready for next course when guests are dining
• Help colleagues in their service when free
• Be ready to offer any suggestion to the guests for food and drinks
• Serve children first, followed by elderly ladies, then ladies, elderly men, men, and then the host
• Serve hot food on hot plate, cold food on cold plate
• Cold food is served before hot food
• Dishes presented in bowls/coupes/cups/glasses should be placed on underplate and served
• Carry entrée dishes and flats on folded waiter's cloth on flat palm of the left hand
• Wipe edges of food containers before taking them to the table
• Do crumbing after main course
• Make sure guests have not left behind anything
Don'ts
• Do not ignore guests
• Do not stare at them
• Do not make them find their table on their own
• Do not leave service area unnecessarily
• Do not spend more time talking to colleagues in kitchen
• Do not sneeze or cough in the service area
•Do not run around
• Do not touch any facial parts during the service
• Do not comb your hair in the dining area
• Do not shout or talk loudly in the restaurant
• Do not listen to guests' conversation
• Do not chew gum or tobacco
• Do not smoke in the restaurant
• Do not eat or taste in restaurant, especially in the guest's presence
• Do not touch blade of knife, bowl of spoon, or prongs of fork while handling them
• Do not argue with guest or colleague
• Do not lay teaspoon as a part of cover on the table
• Do not carry half plates and full plates on tray
• Do not clear glasses and coffee cups till the guests leave the dining area
Do not expect tips
Do not consume alcohol while on duty
Do not lay hands on the guest food
