How to clearing the full plates in hotels and restaurants??

• Do not use tray or salver for clearing the plates. Use two-plate method while clearing. 

Start from the right-hand side of the person seated left of the host. 

Pick up the plate with the right-hand making sure that you do not accidentally drop the soiled cutlery. 

• Place the plate between the last finger and thumb supporting the base of plate with three fingers(index, middle, and ring).

• Place table fork horizontally on the full plate, with handle towards the right-hand side. 

Push waste with the large knife and place the knife vertically under the arc of the fork. 

The handle should be away as shown in the picture. Do this work as you move clockwise to the next guest.

• Remove the plate of the next guest and place it on the cushion of the palm. The rim of the plate is supported by thumb and little finger, and base by cushion of the palm.

 Place the table fork besides the other fork. Push waste with the large knife and place under the arc of the fork
