Taking the Order
The station head waiter should be ready to take down the food and beverage orders of soon as they have made their choice. No guest should be made to wait for long time to place hither order.
• Take order correctly and quickly from the right-hand side of the guest. After taking the route repeat it and obtain confirmation from the guest.
• First, take onders till the main course and take orders for sweet, cheese, savoury, and dessert after the main course.
It is recommended to take down order on a pad with pencil, as guests tend to make a lot of changes in their orders while placing them. After the complete order has been confirmed, write or a kitchen order ticket (KOT) book with pen.
Remember the following points while taking order for a group of varying size and gender:
For a group of six guests or less
• Take order from the ladies first standing on their right and then from the men. For example, if there are two couples, first take the orders of both the ladies individually and then from the men, unless the men place order for their ladies and themselves.
For a group of more than six guests
• Start with the elderly lady/lady to her right and move clockwise, taking orders sequentially, without considering age or gender of the other guests.
For two guests, a man and woman
• In a formal meal, take order from the man as the lady would have conveyed her order to him.
a casual environment, start with the lady and then the man.
In a party of two of the same gender
• Each guest will place his/her own order, unless one guest places order for both. If neither places the order readily, address the elder one first.
• In a large group, more than 10 guests
• Take order from the host and he/she will place order for all of his/her guests.
• When not sure who is the host in a large group, commence order taking with the elderly lady and move clockwise to the next person.
(Note: If there is any child in the group, collect his/her order from his/her mother along with hers.)
Do not take order standing far from the guests. If not possible to go the right-hand side due to the positioning of the table, go to his/her left and collect the order. order, do not shout or make guests shout.
• While taking orders
• Use standard abbreviations of the establishment while writing the order on the KOT as long as it is understood by waiter, aboyeur, and cashier.
Taking Orders for Wine
As soon as the food order is collected, a sommelier presents a wine list to all the guests so that they can choose wines to accompany their food order.
He/she should be able to suggest suitable wines as per the dishes the guests have ordered. After collecting the wine order, the sommelier writes it in Beverage Check and collects the wines from the dispense bar.
The wines are served before food. For example, if a guest has ordered for white wine with fish.
The wine is served before the fish. Refer to Chapter 32 for wine service procedures.
