How to serve fish in restaurant or hotels??

 Service of Fish

While serving fish, the following points are to be kept in mind:

• Serve fish on the half plate and it can be either plated or silver served. 

• Make sure the cover has required cutlery.Check for adequate supply of bread and butter.

Keep the necessary accompaniments for fish.

• Serve white wine, if ordered.

If plated

• Collect fish on a half plate (hot or cold plate) from kitchen and place it from the right-hand

If served

• Carry pile of half plates on the flat of left palm over a serviette to the table Place plate from the right-hand side (use waiter's cloth if the plate is warm)

 • Move clockwise to the next guest and repeat till you place plate for the host.

Collect the fish dish from kitchen and take it to the table Take the fish dish closer to the guest's plate from the left-hand side. Using service spoon and fork, serve fish on the plate and move counter clockwise to the next guest. Serve the host last

Remove plates if all guests at the table have finished the fish course using two-plate method

• Remove wine glasses and other accompaniments kept for the fish course
